Honey flows slowly, water fast. Glycerol's viscosity is ~1000× water's. Why? Step 1: Glycerol (C₃H₈O₃) has 3 –OH groups → extensive H-bonding network. Step 2: Molecules grip each other; layers resist sliding → high η. Step 3: Heating honey makes it runny: faster molecules break H-bonds momentarily, slipping past. Step 4: Motor oil grades (10W-30) specify viscosity at winter/operating T — engines need flow when cold, film strength when hot.
