A fully turgid leaf cell has water potential near zero (water cannot enter further), while dry soil has very negative water potential — so water flows from soil into roots. When you add fertilizer too close to roots, the soil's solute potential drops sharply and water can actually flow OUT of roots, 'burning' the plant.
