Study notes
Why does the temperature of boiling water stay at 100°C even on full flame? Step 1: Heat from the flame enters the water. Step 2: Instead of making particles move faster (higher temperature), the energy breaks inter-particle forces. Step 3: Breaking these bonds lets liquid particles escape as gas. Step 4: This energy is the latent heat of vaporisation. Step 5: Only after all water becomes steam can the temperature rise above 100°C.
